Fall camping trips are here – so make the most of them in your new or used RV! Fall is my family’s favorite time of year to go camping. Cool mornings, crisp evenings, gorgeous nature hikes, and a bowlful of chili around the fire are just a few of the perks you can enjoy when camping in the fall.

Prep & Check

You’ll want to check over your RV to make sure everything is in working order – especially those cool-weather amenities that you might not think about checking during the summer months.

Make sure to take a look at the following:

  • Propane tanks
  • Furnace
  • Electric fireplace, if you have one
  • Tank heaters, if you have them
  • Roof for cracks or other damage
  • Tires, hitch, and brakes
  • Smoke/CO detectors

Fall is an amazing time of year, but the daily weather can be more unpredictable than the dog days of summer. A rainy day can’t be ruled out, either. So, make sure to pack the following so that you can stay dry and comfortable no matter the weather!

Layers Upon Layers

You’ll probably experience cool mornings and evenings with warm afternoons, so packing layers is a necessity.  Even though this means packing more, you won’t regret having what you need. Pack base layers that are thin, lightweight, and comfortably hug your body while wicking moisture and sweat away. Hoodies and fleece pullovers are ideal mid-layers, and you’ll want to pack a weather-resistant jacket for an outer layer.

Depending on your level of exertion, you might be able to get away with rewearing base layers at least once, but one item you won’t want to rewear are your socks. Clean and dry socks every day are an absolute must, so pack extras (and even extras on top of extras if you plan to go hiking and your feet might get wet).

Can’t-Go-Wrong Camping Recipe: Taco Soup!

One of my favorite-of-all-time camping recipes is Taco Soup! It’s extremely easy to throw together in your new or used RV, and it’s a great bowlful of flavor year round. Don’t let the “soup” fool you into thinking it’s not a good camping recipe for late summer. Your family will wolf this down in any weather!

Taco Soup

Ingredients

  • 2 pounds ground beef or cooked, shredded chicken breast
  • 1-2 envelopes taco seasoning (your preference: season to taste)
  • 1 envelope Ranch dressing seasoning mix
  • 1 ½ cups water
  • 2 cans black beans, rinsed and drained
  • 2 cans cream corn
  • 2 cans pinto beans, rinsed and drained
  • 1 can (14 ½ oz) diced tomatoes
  • 1 can (10 oz) diced tomatoes with green chilies
  • Additional toppings: sour cream, shredded cheddar cheese, corn chips

Directions:

  • Brown the ground beef in a skillet over medium-high heat, crumbling it as you cook. Drain off the fat and discard.
  • If you’re choosing to use chicken instead, cook it through and shred with a fork once it’s cooled.
  • Place cooked meat directly into slow cooker.
  • Add all other ingredients. If you were looking for a difficult recipe, this ain’t it!
  • Heat on low for 4 hours and serve with the toppings of your choice.

This may look and feel like chili, but it’s really like tacos in a bowl! And it’s so easy to adjust based on your personal preferences. If you want more heat and zip, add 2 full packets of taco seasoning or even a 4 oz can of diced green chilies. If you prefer red beans over black beans, substitute as you like. You can even serve this spooned over cooked rice or tortilla/corn chips if you want to be extra hearty!

Best of all, this camping recipe is easy to throw together in the morning as you’re clearing the breakfast dishes. Simply add everything in the slow cooker and turn it on before leaving for the afternoon – that way, when you come back to your new or used RV, dinner is served.

Easy Camping Recipe: BBQ Chicken Pizza

Want a fast, easy, and delicious recipe to take with you on your next camping trip in your new or used RV? Then you’ll want to try this easy camping recipe for BBQ chicken pizza. It assembles in about 5 minutes and bakes in 15. A “ready in 20” dinner? Yes, please!

BBQ Chicken Pizza

Ingredients:

  • 6 slices naan (sort of like pita bread)
  • Your favorite BBQ sauce
  • 2 ½ cups shredded cheddar jack cheese
  • 2 cups cooked, shredded/cubed chicken
  • 6 slices bacon, cooked and chopped/crumbled
  • 1 red onion, thinly sliced
  • Olive oil

You’ll also need:

  • Baking sheet
  • Pastry brush
  • Knife or spatula
  • Frying pan

Directions:

  • Turn on oven to 400 degrees.
  • Cook the bacon until crisp and remove from heat, draining off grease.
  • Add a small drizzle of olive oil to each piece of naan bread and place on baking sheet.
  • Drizzle BBQ sauce on each naan bread (on top of olive oil) and evenly distribute with a spatula or knife.
  • Divide the chicken evenly between the naan, spreading it across the top of each piece.
  • Sprinkle each naan with cheese.
  • Top with a sprinkle of bacon and onions.
  • Bake for 10-12 minutes or until the cheese is melted and golden.
  • Enjoy!

This is a family favorite recipe that we make year-round, whether we’re camping or at home! It’s easy for the kids to help with and is a crowd pleaser. Good luck enjoying the leftovers the next day – there won’t be any!

A few tips:

  • I purchase deboned rotisserie chicken in the deli section. There’s no cooking, chopping, or anything else – just open the carton and top the naan!
  • If you are really in a hurry, use a bag of bacon pieces from the salad dressing/crouton aisle at the grocery store instead of cooking your bacon.
  • Use parchment paper or aluminum foil on the baking sheet for easy clean up.
